Portuguese Chorizo Soup

Adapted from The Soup Book, Portuguese Potato and Kale Soup by Sophie Grigson.

Ingredients

  • 1 lb potatoes, peeled and sliced
  • 4 cloves garlic
  • 1 small onion, finely chopped
  • 225g kale
  • 4 oz Spanish chorizo, without skin, sliced

Directions

  1. Place the potatoes in a large pot with garlic and onion. Add salt and pepper, and enough water to completely cover. Simmer until tender, the blend until very smooth with stick blender. Adjust seasoning, adding especially pepper.
  2. While potatoes cook, trim kale and shred very thinly (~1/8 in).
  3. Bring soup back to a boil, then add kale and sausage. Ladle into soup bowls, and drizzle a little oil for serving.
