Bruschetta

Bruschetta

Delicious summer snack.

Ingredients

  • 1 1/2 lbs ripe Roma tomato
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 6 to 8 fresh basil leaves, thinly sliced
  • 3/4 tsp sea salt
  • 1/2 tsp pepper
  • 1 baguette (Italian bread, French bread, etc.)
  • 1/4 cup olive oil

Directions

  1. Bring 2 quarts of water to a boil. Cut small “x” in the bottom end of each tomato. Blanch for 1 minute.
  2. Preheat oven to 450°F, with rack near top of oven.
  3. Finely chop the tomatoes and place them in a medium bowl. Mix in garlic, 1 tbsp extra virgin olive oil, and balsamic. Add basil, salt, and pepper. Adjust to taste.
  4. Slice the baguette into 1/2 inch slices, brush oil on one side, and place oil-side down on a baking sheet. Toast slices (in batches if needed) for ~5 minutes.
