Bruschetta
Delicious summer snack.

Ingredients
- 1 1/2 lbs ripe Roma tomato
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 6 to 8 fresh basil leaves, thinly sliced
- 3/4 tsp sea salt
- 1/2 tsp pepper
- 1 baguette (Italian bread, French bread, etc.)
- 1/4 cup olive oil
Directions
- Bring 2 quarts of water to a boil. Cut small “x” in the bottom end of each tomato. Blanch for 1 minute.
- Preheat oven to 450°F, with rack near top of oven.
- Finely chop the tomatoes and place them in a medium bowl. Mix in garlic, 1 tbsp extra virgin olive oil, and balsamic. Add basil, salt, and pepper. Adjust to taste.
- Slice the baguette into 1/2 inch slices, brush oil on one side, and place oil-side down on a baking sheet. Toast slices (in batches if needed) for ~5 minutes.
