Coconut Custard "Pie"

Coconut Custard

This is kinda like a pie, but it’s really a custard. The eggy mixture makes a satisfying bouncy bottom crust, and the shaved coconut floats to the top. It’s a really pleasing dessert. Good on day one. Better the next day.

Ingredients

  • 4 eggs - beaten
  • 1 3/4 cups sugar
  • 2 cups whole milk
  • 3/4 stick butter
  • 3/4 cup flour
  • 1 teaspoon vanilla
  • 2 cups unsweetened coconut shavings

Directions

  1. Preheat oven to 350°F and grease two 9” pie pans with butter
  2. Mix all the ingredients together in a big bowl.
  3. Pour half of the mix into each pan.
  4. Bake it for 30-40 minutes, or until the mix is clearly set.
  5. Very nice after cooled on a rack. Better the next day.
