Coconut Custard "Pie"

This is kinda like a pie, but it’s really a custard. The eggy mixture makes a satisfying bouncy bottom crust, and the shaved coconut floats to the top. It’s a really pleasing dessert. Good on day one. Better the next day.

Ingredients
- 4 eggs - beaten
- 1 3/4 cups sugar
- 2 cups whole milk
- 3/4 stick butter
- 3/4 cup flour
- 1 teaspoon vanilla
- 2 cups unsweetened coconut shavings
Directions
- Preheat oven to 350°F and grease two 9” pie pans with butter
- Mix all the ingredients together in a big bowl.
- Pour half of the mix into each pan.
- Bake it for 30-40 minutes, or until the mix is clearly set.
- Very nice after cooled on a rack. Better the next day.
