Sweet Cornmeal Cake

This is very good with a lemon curd as the icing.

Ingredients

  • 1 1/3 cup flour
  • 1 cup yellow cornmeal
  • 1 1/2 cup sugar
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 3 eggs lightly beaten
  • 1 1/2 cups buttermilk
  • 3/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract

Directions

  1. Preheat the oven to 375°F, and grease a 10-inch skillet with butter.
  2. Combine wet and dry ingredients in separate bowls.
  3. Gently fold wet mixture into the dry, and immediately pour into the buttered skillet.
  4. Bake until a toothpick comes out clean (about 25 min, but know your oven).
