Sweet Cornmeal Cake
This is very good with a lemon curd as the icing.
- 1 skillet-sized cake
- 20 minutes
- 25 minutes
Ingredients
- 1 1/3 cup flour
- 1 cup yellow cornmeal
- 1 1/2 cup sugar
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 3 eggs lightly beaten
- 1 1/2 cups buttermilk
- 3/4 cup melted butter
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
Directions
- Preheat the oven to 375°F, and grease a 10-inch skillet with butter.
- Combine wet and dry ingredients in separate bowls.
- Gently fold wet mixture into the dry, and immediately pour into the buttered skillet.
- Bake until a toothpick comes out clean (about 25 min, but know your oven).
