Overnight simple no-knead bread

Simple No-knead white bread loaf. Adapted from a few NYT no-knead recipes.

Ingredients

  • 400 g bread flour
  • 8 g salt
  • 2 g yeast (1/2 tsp)
  • 280 g warm water
  • 1/8 tsp white vinegar (or lemon juice)
  • rice flour for dusting

Directions

  1. Mix flour, salt, and yeast in large bowl. Add water and vinegar mixture. Mix until rough dough ball.
  2. Cover and let rest at room temp overnight.
  3. In morning, shape the loaf and let rest and rise (1–2 hours).
  4. Heat dutch oven in 475 °F oven. Drop in loaf and bake for 25 minutes. Remove lid, reduce temp to 425 °F, and bake for 15 minuntes longer.

Notes

  • To double the recipe for two loaves, just use slightly less than double the water.
